Nutella Stuffed Brownies

I made these Nutella Stuffed Brownies in advance for Valentine’s Day hot fudge brownie sundaes but we ended up eating the whole tray last night because they were so outrageously good! So much for my “clean eating” diet… I didn’t last one day. 

These brownies just go to show that if you just relax, things will usually work out. So you know how there are dozens of brownie recipes online which claim to be “the only one you will ever need” or “the best ever” (I use these phrases myself but I am so insanely picky that if I say it please know that it is actually true)… well I’ve tried all of them and so far none have been as good as Ghirardelli’s boxed brownie mix. This is very frustrating to me as I am a pastry chef and just could not bring myself to accept this sad truth. But I did for a few years. Until now. These brownies are chewy, fudgy and cakey at them same time with a beautiful crust and deep, rich chocolatey flavor and a little Nutella never hurts…

Funny thing is, these Nutella Stuffed Brownies sort of happened by accident. I just haphazardly started mixing typical brownie ingredients together creating a cloud of cocoa (I figured I wouldn’t kill myself trying to make the perfect brownie recipe since it just did not seem to be in the cards and I only needed them for my brownie sundaes). Then I wondered how I could stuff a brownie, as everything is better stuffed :) and I ended up with these Nutella Stuffed Brownies. I wasn’t even going to taste them since I am on a “healthy” diet, but then everyone started going crazy over them and I ended up eating most of the tray myself. Sure enough, they were “the most amazing brownies I’ve ever tasted” as my husband put it. My 16 year old said they were the f#$%&*% bomb????

I like my brownies on the thick side, but if you want them thinner use a larger pan and reduce baking time to about 25-30 minutes.

Nutella Stuffed Brownies


  • 1 1/2 sticks unsalted butter (12 ounces)
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups all purpose-flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups sugar
  • approximately 8 ounces Nutella


  1. Preheat oven to 325 degrees.
  2. Thoroughly grease a 10 x 10-inch square non-stick baking pan with butter, making sure to get the corners.
  3. Melt the butter in a small pan and mix in the cocoa powder. Allow to cool to room temperature.
  4. In a bowl, mix together the flour, baking powder and salt.
  5. In a separate bowl, whisk the eggs, vanilla and the sugar together.
  6. Whisk the room temperature chocolate mixture into the egg-sugar mixture.
  7. Fold in the flour mixture (batter should be thick).
  8. Spread half of the brownie batter into the buttered pan with a spatula.
  9. Using a teaspoon, drop dollops of Nutella on the batter using your finger to push it off (about 9 dollops= 3 rows of 3), leaving a space in the middle for testing with a toothpick later.
  10. Spread the rest of the batter over the Nutella.
  11. Bake for 40 minutes, then test in the middle of the pan for doneness. You should not see gooey batter on the toothpick. If not done, bake for an additional 5 minutes and test again.
  12. Allow to cool completely in pan before cutting.
